Creamy pumpkin cheesecake, a thick buttery graham cracker crust, warm fall spices, and absolutely no oven required? These No-Bake Pumpkin Cheesecake Bars might be one of my favorite ways to officially welcome pumpkin season.

The filling is thick and creamy with real pumpkin puree, cream cheese, brown sugar, cinnamon, and pumpkin pie spice, all piled onto a cinnamon brown sugar graham cracker crust. Instead of baking, the bars chill in the refrigerator until the filling is firm enough to cut into thick, creamy squares.

And I really wanted these to taste like pumpkin cheesecake, not plain cheesecake that happens to be orange. Between the pumpkin, brown sugar, vanilla, cinnamon, pumpkin pie spice, and cinnamon-spiked crust, there's plenty of cozy fall flavor in every bite.

Top each square with a big swoop of whipped cream and a dusting of cinnamon, and tell me these aren't basically fall on a plate.

  why you'll love them!

There are a lot of reasons these are going directly into my fall dessert rotation.

  • No oven required. Everything sets in the refrigerator, making these especially easy for early fall days when it's still way too warm outside.
  • Thick and creamy filling. Blotted pumpkin and whipped cream create a filling that's creamy without being loose or mousse-like.
  • Plenty of pumpkin flavor. We're using real pumpkin puree plus pumpkin pie spice, cinnamon, brown sugar, and vanilla.
  • Extra-thick graham cracker crust. Brown sugar and cinnamon make the crust almost as good as the cheesecake itself.
  • Perfect for making ahead. They need at least 6 hours to chill, so they're an ideal dessert to prepare the night before.
  • Nine generous bars. I cut these into 9 big squares for thick, bakery-style pumpkin cheesecake bars.

What are No-Bake Pumpkin Cheesecake Bars

No-bake pumpkin cheesecake bars are a chilled cheesecake dessert made with cream cheese, pumpkin puree, sugar, warm spices, and whipped cream over a graham cracker crust. Unlike traditional cheesecake, they don't contain eggs and don't require baking.

Instead, freshly whipped heavy cream provides structure. Once folded into the cream cheese mixture and refrigerated, the filling becomes thick, creamy, and sliceable.

That also means there's no water bath, no worrying about cheesecake cracks, and no turning on the oven.

Win, win, win.

No-Bake Pumpkin Cheesecake Bars Ingredients

Graham Cracker Crumbs: You'll need 2 cups of graham cracker crumbs, which is approximately 15 full graham cracker sheets.

I wanted a substantial crust for these bars rather than a super thin layer. The buttery graham crackers add texture and balance all that creamy pumpkin filling.

Brown Sugar: We're actually using brown sugar in both the crust and cheesecake.

In the crust, it adds sweetness and a deeper caramel flavor.

In the filling, brown sugar adds the subtle molasses notes that make pumpkin desserts taste extra cozy.

Cinnamon: Adding cinnamon directly to the graham cracker crust is one of those tiny details that makes the whole dessert taste more intentionally fall.

There's also cinnamon in the filling because I didn't want to rely entirely on pumpkin pie spice for flavor.

Unsalted Butter: Melted butter binds the graham cracker crumbs together so the crust stays firm enough to support the cheesecake.

Pumpkin Puree: Use 100% pure pumpkin puree, not pumpkin pie filling.

Pumpkin pie filling already contains sweeteners and spices, which would throw off both the flavor and texture of this recipe.

Remember to measure the pumpkin before blotting it.

Full-Fat Cream Cheese: Use full-fat block-style cream cheese.

I don't recommend the spreadable cream cheese sold in tubs for no-bake cheesecake. It typically contains more moisture and can leave the filling softer than intended.

Also, make sure your cream cheese is properly softened. Cold cream cheese is one of the easiest ways to end up with little lumps throughout your filling.

Powdered Sugar: Powdered sugar dissolves easily into the cheesecake mixture without adding a grainy texture.

Pumpkin Pie Spice: This gives us those classic fall flavors without requiring five individual spice jars.

Vanilla Extract: Vanilla rounds out the pumpkin and warm spices and gives the filling more of that classic cheesecake flavor.

Heavy Whipping Cream: Heavy whipping cream is great for topping!

How to Make No-Bake Pumpkin Cheesecake Bars

1. Prepare the Pan

Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides.

You'll use that parchment later to lift the entire cheesecake out of the pan before slicing.

2. Make the Graham Cracker Crust

Combine the graham cracker crumbs, brown sugar, cinnamon, and a pinch of salt. Pour in the melted butter and stir until every crumb looks evenly moistened.

The mixture should resemble wet sand and hold together when you squeeze some between your fingers.

3. Pack the Crust Firmly

Transfer the crumbs to the prepared pan and press them firmly into an even layer.

I like using the flat bottom of a measuring cup or drinking glass for this. Really pack it down.

A loosely packed crust is much more likely to crumble when you slice the cheesecake later.

Transfer the crust to the refrigerator while you make the filling.

4. Blot the Pumpkin

Measure ¾ cup pumpkin puree first.

Spread it over several layers of paper towels, cover with additional paper towels, and gently press to absorb excess moisture. Replace the towels and repeat if they're especially wet.

Again, don't squeeze the pumpkin bone-dry. We're simply removing excess water.

5. Beat the Cream Cheese

Beat the softened cream cheese by itself for about 1 to 2 minutes until completely smooth.

I like doing this before adding anything else because it's much easier to eliminate cream cheese lumps now than after all the other ingredients are in the bowl.

6. Add the Pumpkin and Spices

Add the blotted pumpkin, powdered sugar, brown sugar, pumpkin pie spice, cinnamon, vanilla, and salt.

Beat until completely smooth and evenly combined. At this point, it should already smell like fall.

7. Whip the Heavy Cream

In a separate mixing bowl, beat the cold heavy whipping cream until stiff peaks form.

What does that mean? When you lift the beaters out of the bowl, the peak of whipped cream should stand upright rather than immediately folding over.

Don't stop at soft peaks. 

8. Assemble

Spoon the pumpkin cheesecake filling over the chilled graham cracker crust.

Use an offset spatula or the back of a spoon to spread it into an even layer and smooth the top.

9. Chill Until Completely Set

Cover the pan and refrigerate for at least 6 hours.

But here's my actual recommendation:

Make these the night before.

An overnight chill gives the cheesecake plenty of time to firm up and makes slicing so much easier.

This isn't the recipe to rush at hour four and hope for the best.

10. Slice and Decorate

Use the parchment overhang to carefully lift the cheesecake out of the pan. Cut it into 9 large squares using a sharp knife.

For really clean slices, wipe the knife clean between every cut.

Finish each bar with a generous swirl of whipped cream and a light dusting of cinnamon or pumpkin pie spice. I also love adding a few crushed graham crackers on top for texture.

How to Get Clean Cheesecake Slices

There's nothing wrong with a messy piece of cheesecake. It still tastes exactly the same.

But if you're going for those pretty, clean bakery-style squares, there are a few things that really help.

Chill overnight if possible. Six hours is the minimum, but overnight gives you the firmest filling.

Use a large, sharp knife. A tiny serrated knife is going to drag through the filling.

Wipe between every cut. This makes a surprisingly big difference.

Keep the bars cold until slicing. Don't let the pan sit on the counter for 30 minutes before you start cutting.

My Best Tips for No-Bake Pumpkin Cheesecake Bars

  • Use Block Cream Cheese: Full-fat block cream cheese creates the most reliable thick filling. Save the cream cheese spread for your bagel.
  • Soften the Cream Cheese, but Keep the Cream Cold: This recipe needs two completely different temperatures. The cream cheese should be softened so it beats smoothly. The heavy cream should be cold so it whips properly and holds stiff peaks.
  • Don't Skip Blotting the Pumpkin: Pumpkin adds moisture, and unlike baked cheesecake, we don't have an oven to remove it. A quick blot gives you a thicker filling without needing gelatin.
  • Whip the Cream to Stiff Peaks: Under-whipped cream can leave your cheesecake too soft.
  • Fold, Don't Beat: Once the whipped cream goes in, switch to a spatula and fold gently.
  • Give It Enough Chill Time: No-bake cheesecake doesn't magically become sliceable the second you put it into the refrigerator. Give it at least six hours, preferably overnight.

Common Mistakes and How to Avoid Them

Why is my no-bake cheesecake too soft?

There are three likely culprits: excess moisture in the pumpkin, cream that wasn't whipped to stiff peaks, or insufficient chilling time.

Blot the pumpkin, whip the cream properly, and give the bars the full six hours to set.

Why is my cheesecake filling lumpy?

Your cream cheese was probably too cold.

Beat softened cream cheese by itself first until completely smooth before adding the pumpkin and sugars.

Why is my graham cracker crust falling apart?

It may not have been packed firmly enough.

Use the bottom of a measuring cup to really compress the crumbs into the pan before chilling.

Why did my cheesecake lose its fluffy texture?

The whipped cream may have been overmixed into the pumpkin mixture.

Fold gently rather than stirring vigorously so you preserve the air you've incorporated into the cream.

Why can't I get clean slices?

First, give it more time in the refrigerator.

Then use a sharp knife and wipe the blade completely clean between each cut.

Substitutions and Ingredient Notes

Pumpkin: Stick with canned pumpkin puree for the most predictable results. Homemade puree can contain significantly more water.

Cream cheese: Full-fat block cream cheese is strongly recommended. Reduced-fat and spreadable versions can produce a softer filling.

Graham crackers: Another crisp cookie can work for the crust, although it will change the flavor. Gingersnaps would be especially good if you want even more spice.

Heavy cream: I don't recommend replacing the heavy whipping cream with milk or half-and-half. It needs enough fat to whip and provide structure to the cheesecake.

How to Store No-Bake Pumpkin Cheesecake Bars

Keep the bars refrigerated in an airtight container for up to 5 days.

Because the filling contains cream cheese and whipped cream, these should not be stored at room temperature.

I also recommend keeping them chilled until shortly before serving. The texture is at its best when the cheesecake is cold and firm.

Can You Freeze Pumpkin Cheesecake Bars?

Yes. No-bake pumpkin cheesecake bars can be frozen for up to 2 months.

For individual portions, place the sliced bars on a parchment-lined baking sheet and freeze until firm. Then wrap the bars individually and transfer them to an airtight freezer-safe container.

Thaw overnight in the refrigerator before serving.

For the prettiest presentation, I recommend adding whipped cream and any garnishes after thawing rather than before freezing.

Ingredients

Pumpkin Cheesecake Filling

  • ¾ cup pumpkin puree measured before blotting
  • 16 oz full-fat block cream cheese softened
  • ¾ cup powdered sugar
  • cup packed light brown sugar
  • tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • 2 tsp vanilla extract
  • ¼ tsp fine salt
  • 1 cup cold heavy whipping cream

Graham Cracker Crust

  • 2 cups graham cracker crumbs about 15 full graham cracker sheets
  • ¼ cup packed light brown sugar
  • ½ tsp ground cinnamon
  • Pinch of salt
  • 7 tbsp unsalted butter melted

Whipped Topping

  • 1 cup heavy whipping cream
  • 1/3 confectioner’s sugar
  • 1 tsp pure vanilla extract
  • 1 tsp pumpkin pie spice for dusting

Instructions

  • Prepare the pan. Line an 8×8-inch square baking pan with parchment paper, leaving enough overhang on the sides to easily lift the cheesecake out later.
  • Make the graham cracker crust. In a medium bowl, combine the graham cracker crumbs, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until all of the crumbs are evenly moistened.
  • Press the crust into the pan. Transfer the graham cracker mixture to the prepared pan. Firmly press it into an even, compact layer using the bottom of a measuring cup or glass. Refrigerate while you prepare the filling.
  • Blot the pumpkin. Spread the pumpkin puree over several layers of paper towels. Place another layer of paper towels on top and gently press to remove excess moisture. Repeat with fresh paper towels as needed.
  • You don’t need to make the pumpkin dry. We’re just removing some of that excess water.
  • Make the cheesecake base. In a large mixing bowl, beat the softened cream cheese until completely smooth and creamy, about 1–2 minutes.
  • Add the pumpkin and sugar. Add the blotted pumpkin, powdered sugar, brown sugar, pumpkin pie spice, cinnamon, vanilla, and salt. Beat until completely smooth and evenly combined.
  • Whip the cream. In a separate bowl, beat the cold heavy whipping cream with an electric mixer until stiff peaks form.
  • Fold everything together. Gently fold the whipped cream into the pumpkin cream cheese mixture in two or three additions. Fold just until evenly combined, being careful not to deflate the whipped cream.
  • Assemble the cheesecake. Spoon the pumpkin cheesecake filling over the chilled graham cracker crust and spread it into an even layer. Smooth the top with an offset spatula.
  • Chill. Cover and refrigerate for at least 6 hours, but preferably overnight, until completely set.
  • Slice. Use the parchment paper to lift the cheesecake from the pan. Cut into 16 bars using a sharp knife, wiping the blade clean between cuts.
  • Finish and serve. Top each bar with whipped cream and a light dusting of cinnamon or pumpkin pie spice. Add crushed graham crackers if desired.
