For the oat layers

Old-fashioned oats

Creamy peanut butter
Adds richness, helps bind everything together, and brings the peanut buttery goodness.

Honey or maple syrup
Sweetens the bars and keeps the oat mixture soft and chewy.

How to Make No Bake Oatmeal Fudge Bars 

1. Prepare the pan

Line an 8x8-inch pan with parchment paper.

2. Make the oat mixture

In a saucepan over medium-low heat, combine the peanut butter, honey, brown sugar, and coconut oil. Heat until melted and smooth.

3. Stir in vanilla and salt

Remove from heat and stir in the vanilla and salt.

4. Add oats

Mix in the oats and oat flour until evenly coated.

5. Press into pan

Firmly press about two-thirds of the oat mixture into the prepared pan. Set aside.

6. Melt chocolate layer

In a microwave-safe bowl combine chocolate chips, peanut butter, coconut oil, and a pinch of salt.

Microwave in 20-second intervals, stirring between each, until smooth.

7. Add chocolate

Pour the chocolate mixture over the oat base and spread evenly.

8. Add remaining oat topping

Crumble the rest of the oat mixture over top and gently press down.

9. Finish

Sprinkle with flaky sea salt if using.

10. Chill

Refrigerate for 1 to 2 hours until firm.

  • Set aside.
  • In a microwave-safe bowl combine: chocolate chips, peanut butter, coconut oil, pinch salt
  • Microwave in 20-second intervals, stirring until smooth.
  • Pour chocolate mixture over oat base and spread evenly.
  • Crumble remaining oat mixture over top and gently press down.
  • Refrigerate 1–2 hours until firm. Slice into bars and enjoy.
