No Bake Oatmeal Fudge Bars

Ingredients

Oat Layers

Chocolate Fudge Layer

  • cup peanut butter
  • 2 tbsp coconut oil
  • pinch of salt

Instructions

  • Line an 8x8 pan with parchment paper.
  • In a saucepan over medium-low heat add: peanut butter, honey, brown sugar, coconut oil
  • Heat until melted and smooth.
  • Remove from heat and stir in: vanilla and salt
  • Add oats and stir until evenly coated.
  • Press about ⅔ of the oat mixture firmly into prepared pan.
  • Set aside.
  • In a microwave-safe bowl combine: chocolate chips, peanut butter, coconut oil, pinch salt
  • Microwave in 20-second intervals, stirring until smooth.
  • Pour chocolate mixture over oat base and spread evenly.
  • Crumble remaining oat mixture over top and gently press down.
  • Refrigerate 1–2 hours until firm. Slice into bars and enjoy.
