The Best No Bake Cookie Dough Bars

These cookie dough bars are so easy to make. They come together in less than 30 minutes and you do not need anything fancy to get it done – just a mixing bowl, spoon, and a medium loaf pan!

Just 5 Main Ingredients
  • cashew butter – you can also use creamy almond butter or even a blend of both if you wish
  • maple syrup – this sticky sweetener helps bring the bar together. Feel free to use honey or keto maple syrup. This is my favorite keto brand.
  • almond flour – This helps keep the recipe gluten-free and keto-friendly. You can also try with oat flour!
  • vanilla extract – a must n this recipe to give the edible cookie dough its flavor
  • chocolate chips – use some mini morsels for your cookie dough base and regular morsels for your melted top
  • sea salt – if using unsalted nut butter you may wanna add a little bit of salt to the dough

Kitchen Equipment & Tools Needed

To make these no bake cookie dough bars you will need a mixing bowl, sauce pan, measuring cups and spoons, parchment paper, and a medium loaf pan.

How to Make No Bake Cookie Dough Bars

This cookie dough bar recipes is super easy and doesn’t even involve turning on the oven! Anyone can make these and enjoy for dessert or as a snack!

First you want to start by making your cookie dough! Mix your cashew butter and maple syrup together. Then add in your almond flour and chocolate chips (choc chips are optional).

Press your cookie dough into your parchment paper lined loaf pan. After your cookie dough base has been chilled in the freezer for about 20 minutes, add your top chocolate layer.

The chocolate layer is a mix between chocolate chips and cashew butter. This gives it a very creamy texture. Save these in the fridge to stay fresh and creamy.

Notes About the Recipe

Flour – as mentioned you can use oat flour instead of almond flour!

Sweetener – Make sure to use a sticky liquid sweetener here. You can use agave or date syrup as well.

Chocolate Topping – Mixing chocolate chips with cashew butter allows for a more fudgey top. You can also just do melted chocolate on top

  • You can keep in the fridge or at room temperature.
  • To freeze, make sure the bars are in an airtight container .

Ingredients

Chocolate Layer

  • 1/2 cup chocolate chips
  • 3 tbsp cashew butter

Instructions

  • Line a medium loaf pan with parchment paper and set aside.
  • In a medium bowl combine your nut butter with maple syrup and vanilla extract. Add in the almond flour and salt. Stir until combined and add in your choc chips.
  • Press cookie dough into your pan. Place in freezer for about 10 minutes.
  • Melt chocolate chips and cashew butter in a small saucepan over low heat until completely melted.
  • Remove your pan from the freezer and pour your melted chocolate over the cookie dough. Place in the fridge or freezer to set. I prefer the fridge because it will be smoother and easier to bite into
