  • Apples – You can use any apples you like. Granny smith tends to hold their shape a bit more. Apples are a great source of vitamin C and have been shown to support heart health and lower the risk of diabetes
  • Eggs – this binds the batter together and provides structure.
  • Oat flour – I like to use Bob’s Red Mill
  • Almond flour – this is such a good gluten-free flour option that adds healthy fats and weight to these muffins
  • Maple syrup – this sticky sweetener lends the classic fall warm flavor
  • Coconut oil – you can use coconut, avocado or any other neutral oil.
  • Vanilla extract – a must in all baking recipes
  • Apple pie spice – these apple crumb muffins need this spice to give it
  • Cinnamon – a must have fall spice!
  • Baking powder – to lift and lighten the muffins

To make apple crumb muffins you will need a mixing bowlmeasuring cups and spoons, and a muffin tin.

How to Make these Apple Crumb Muffins

First preheat your oven to 350F. Then cut your apples in to small pieces.

In a small bowl, add the coconut oil, maple syrup, eggs, and vanilla extract. Whisk together. Then add in your dry ingredients. Be careful not to over mix because this will result in tough muffins.

Afterwards, add in your cut up apples.

How to freeze apple muffins

Allow the muffins to cool completely and wrap them in plastic wrap. To thaw, let them come to room temperature on the counter and microwave if you need.

Do I have to put the crumble on top?

You do not! If you do not want a super sweet muffin just omit the crumbs.

Should I peel the apples?

You can keep the skin on or peel it off!

How do I make the muffins fluffy?

Make sure the oven is at the right temperature and do not over mix your batter!

GF Apple Crumb Muffins

Ingredients

  • 2 eggs
  • 1/2 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1 tbsp apple pie spice
  • 1 1/2 cup almond flour
  • 1/2 cup oat flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 large apple chopped

Apple Crumb Top

  • 1 cup GF all purpose flour
  • 1/2 cup packed brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp apple pie spice
  • 1 stick unsalted butter
  • pinch of salt

Instructions

  • Preheat the oven to 350F.
  • Wash, core, and chop the apple into small pieces.
  • In a bowl whisk together the wet ingredients.
  • In a separate bowl, mix the apple muffin dry ingredients till there are no clumps.
  • Gently combine the wet and dry ingredients. Don’t overmix!
  • Fold the apple pieces into the batter.
  • In a separate bowl, mix your crumb ingredients. Make sure to soften/ melt your butter first.
  • Scoop the batter in a lined or greased muffin pan and add the crumble on top. Fill the batter close to the top.
  • Bake on 350F for 16 – 18 minutes on or until a toothpick comes out clean after inserting in the middle.
