I can’t lie. I am pretty sure we all get those late-night dessert cravings. This Single Serve Chocolate Chip Cookie will quickly satisfy it without having to make a full batch of cookies! What makes this cookie even better is that it is low carb, dairy-free, gluten-free, and egg-free! You can find all of the healthy for you ingredients like cashew butter, maple syrup, and almond flour in this cookie.

Growing up my mom was alway making chocolate chip cookies for us. Sometimes she would treat us to Chips aHoy and it was the best!! Obviously the chocolate chip cookie is a classic and I am ALWAYS down for one. But sometimes you just don’t want to bake a WHOLE batch of cookies that you wont eat… or will binge eat. So I made a super easy and healthy choc chip cookie that will be big enough to satisfy all your cravings!

How to make this Vegan & Gluten-Free Chocolate Chip Cookie

To start, combine your cashew butter, maple syrup, and vanilla together in a medium mixing bowl. Add in the almond flour, coconut flour, and baking powder last and mix together using a rubber spatula.

Fold in tthe non-dairy dark chocolate chips, then roll the dough into a large ball. PLace it on a small piece of parchment paper, and then flatten slightly. Top with more chocolate!

Allow the cookie to cool for a few minutes once you take it out and dig in!

Ingredients

  • 2 tbsp cashew butter
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 2 tbsp almond flour
  • 2 tbsp coconut flour
  • 1/4 tsp baking powder
  • 3 tbsp non-dairy dark chocolate chips

Instructions

  • Preheat your oven t. 350F
  • Mix all of youringredients in your medium bowl.
  • Roll your doughinto a balla nd top with more choocolate chips.
  • Bake for 12-15 minutes
