Can you use any milk for this recipe?

I use almond milk for this vegan breakfast, but it will definitely work with dairy and non dairy milk! To keep this recipe vegan. I used maple syrup as sweetener but if you do not care about keeping it vegan, you can use whatever you want!

Can you freeze it?

You can definitely freeze this oatmeal bake! It can keep for up to 3 months. Wrap the oatmeal in individual portions in foil and place in a freezer bag. When you want to revisit it, thaw it in the fridge overnight and reheat with a drop or two of milk in the microwave!

How long can you store it?

This Peanut Butter Banana Baked Oats is PERFECT for breakfast. Store the cooled oatmeal bake in an airtight container in the fridge and it will stay for about 5 days. I like to reheat my portion when eating for breakfast or as a snack!

Peanut Butter Banana Oat Bars

Ingredients

  • 2 ripe bananas
  • 1 tsp vanilla extract
  • 1 1/2 cup almond milk
  • 1/2 cup maple syrup
  • 1/4 cup peanut butter
  • 2 cups old fashipned oats
  • 1 tsp cinnamon
  • 2 scoops collagen protein
  • 1 tsp baking powder

Instructions

  • Preheat the oven to 375° F.
  • In a large mixing bowl, mash the bananas, then add the almond milk, peanut butter, maple syrup, and vanilla extract.
  • Combine the oats, cinnamon, baking powder, and collagen. Stir with a spatula.
  • Bake uncovered in the preheated oven until the top of the oatmeal is golden and the mixture is set, about 30-35 minutes. Remove and allow it to cool for 5 minutes.
  • If using an 8×8 pan bake for 35-40 minutes
  • Serve with drizzled peanut butter and banana slices, if desired.
