Protein Ice Cream Caramel Bites Ingredients:

  • Greek Yogurt: The star of our protein bites, Greek yogurt provides a creamy and tangy base while adding a protein punch that’ll keep you feeling satisfied.
  • Full-Fat Coconut Milk: This luscious coconut milk adds richness to the bites, infusing them with a tropical twist and creating a smooth, velvety texture.
  • Chocolate Caramel Protein Powder: Elevate the nutrition and flavor profile with this protein-packed powder that adds a delightful chocolate caramel taste. I used Chike’s protein powder for this recipe and it truly takes these bites to the next level!! Not only is it packed with protein, but it is basically COFFEE in protein powder form.
  • Maple Syrup: A natural and wholesome sweetener, maple syrup brings its unique sweetness, beautifully complementing the other ingredients.
  • Creamy Peanut Butter: A spoonful of creamy peanut butter adds a delightful nutty essence, enhancing the overall flavor and providing extra protein.
  • Vanilla Extract: A touch of vanilla extract adds depth and warmth to the bites, elevating the taste and aroma.

Chocolate Coating:

  • Chocolate Chips: These rich and luscious chocolate chips form the indulgent coating for our protein bites, taking them to the next level of yumminess.
  • Coconut Oil: To achieve a smooth and glossy chocolate coating, we add a hint of coconut oil to the melted chocolate.

Instructions:

  1. In a blender, combine the Greek yogurt, full-fat coconut milk, chocolate caramel protein powder, maple syrup, creamy peanut butter, and vanilla extract. Blend until you achieve a creamy and smooth consistency that makes your taste buds dance with anticipation.
  2. Pour the delectable mixture into a square mold, ensuring an even distribution of the goodness. Place the mold in the freezer for about 30 minutes, allowing the bites to set and firm up.
  3. While the bites chill, it’s time to work on the divine chocolate coating. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between each interval. This ensures a velvety smooth chocolate that’s ready to envelop the bites in pure delight.
  4. Pop out the chilled caramel bites from the mold and dip each one into the melted chocolate. Allow the excess chocolate to drip off, and place the coated bites on a parchment-lined baking sheet.
  5. Place the bites back into the freezer for about 15 minutes or until the chocolate coating is firm and luscious.
  6. Once the chocolate has hardened, the time has come to savor the fruits of your labor! Bite into these guilt-free delights and enjoy the luxurious combination of creamy caramel, chocolatey goodness, and a protein boost that’ll keep you fueled and satisfied.

Absolutely! While chocolate caramel protein powder adds a delightful flavor, you can experiment with other protein powder flavors like chocolate, vanilla, or even a plant-based option. Just make sure to choose a powder that complements the overall taste of the bites.

2. Can I make these protein bites ahead of time?

Certainly! These protein bites are perfect for meal prep and snacking throughout the week. Simply store them in an airtight container in the refrigerator for up to 3-4 days for maximum freshness.
