Soft-Baked Chocolate Chip Oatmeal Bars

  why you'll love them!

  • One-bowl magic. Easy to mix, easy to clean up.
  • Naturally sweetened. A combo of brown sugar and honey (or maple syrup) gives just the right sweetness.
  • Perfectly chewy. Rolled oats and oat flour create that soft-baked, cookie-like texture.
  • Customizable. Swap nut butters, chocolate types, or add nuts/dried fruit.
  • Breakfast, snack, dessert. They really do it all.

Soft-Baked Chocolate Chip Oatmeal Bars Ingredients

  • Rolled Oats – The star of the show. They give that classic oatmeal-cookie chew and keep things hearty.
  • Oat Flour – Just ground-up oats! Helps hold everything together while keeping it gluten-friendly (if you use GF oats).
  • Baking Soda & Cinnamon – A little lift and that cozy spice you love.
  • Salt – Always essential to balance sweetness and deepen flavor.
  • Butter or Coconut Oil – Melted for easy mixing. Butter gives richness, while coconut oil adds a hint of nuttiness if you want a dairy-free option.
  • Peanut Butter – Creamy, dreamy, and the best flavor boost. Almond or cashew butter would be delicious too.
  • Brown Sugar & Honey – A duo of sweetness: brown sugar for caramel-y notes and honey for natural sweetness and moisture. (Maple syrup works, too.)
  • Egg – Helps bind everything together while keeping them soft and rich.
  • Vanilla Extract – Always! It rounds out the flavors beautifully.
  • Chocolate Chips – Mini or chopped, these melt into gooey pockets of joy in every bite.

How to Make Soft-Baked Chocolate Chip Oat Bars

  • Preheat & Prep: Set your oven to 350°F and line an 8x8-inch pan with parchment paper for easy lifting.
  • Mix Wet Ingredients: In one big bowl, stir together your melted butter, peanut butter, brown sugar, and honey until silky smooth. Add the egg and vanilla and whisk it in.
  • Add Dry Ingredients: Fold in the rolled oats, oat flour, cinnamon, baking soda, and salt. Stir until you have a thick, slightly sticky batter.
  • Chocolate Time: Gently fold in the chocolate chips (save a few to sprinkle on top if you're feeling fancy).
  • Bake: Spread the batter into your prepared pan and smooth the top. Add extra chocolate chips if desired. Bake for about 22–25 minutes, until the edges are golden and the center is set.
  • Cool & Slice: Let them cool completely in the pan for the cleanest cuts. For perfect squares, chill them in the fridge for 10–15 minutes before slicing.

  • Boost the nutrition: Add chopped nuts, seeds, or dried fruit for extra texture.
  • For a lighter sweetness: Use maple syrup instead of honey, or reduce the brown sugar a bit.
