Preheat the oven to 350F
Mash up three ripe bananas and set aside
Using an electric mixer, combine dairy-free butter and sugar
Add in bananas, two eggs, and vanilla extract.
Mix your flour, baking powder, and salt into your wet ingredients.
Prepare your crumb topping. Combine your melted butter with brown and white sugar, cinnamon, and salt
Grease two large muffin tins with nonstick cooking spray. I tend to get 9-10 large muffins from this recipe.
Scoop your muffin batter into the muffin tin, filling it up halfway.
Once all your batter has been scooped into the muffin tins, distribute the crumb topping atop all of the muffins
Bake for 18-22 minutes or until the edges are brown and the center comes out clean
