Dairy Free Banana Crumb Muffins

Ingredients

Muffin

  • 1 stick dairy free butter
  • 3/4 cup raw cane sugar
  • 3 ripe bananas
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Crumb topping

  • 1 stick of dairy-free butter melted
  • 1/3 cup dark brown sugar
  • 1/3 cup white sugar
  • 2 tsp cinnamon
  • 1/8 tsp salt

Instructions

  • Preheat the oven to 350F
  • Mash up three ripe bananas and set aside
  • Using an electric mixer, combine dairy-free butter and sugar
  • Add in bananas, two eggs, and vanilla extract.
  • Mix your flour, baking powder, and salt into your wet ingredients.
  • Prepare your crumb topping. Combine your melted butter with brown and white sugar,  cinnamon, and salt
  • Grease two large muffin tins with nonstick cooking spray. I tend to get 9-10 large muffins from this recipe.
  • Scoop your muffin batter into the muffin tin, filling it up halfway.
  • Once all your batter has been scooped into the muffin tins, distribute the crumb topping atop all of the muffins
  • Bake for 18-22 minutes or until the edges are brown and the center comes out clean
