Preheat your oven to 350°F (175°C).
Grease an 8-inch square baking dish with cooking spray or butter.
Open the pack of refrigerated cinnamon rolls and bake as normal- minus the frosting. Allow the rolls to cool.
Cub the cinnamon rolls and place them in the baking dish, Drizzle the melted butter over the cinnamon rolls.
In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, and ground cinnamon until well combined.Pour the mixture over the cinnamon rolls in the baking dish.
Press the cinnamon roll pieces down into the liquid mixture so that they are well soaked.
Bake the cinnamon roll bread pudding in the preheated oven for 45-50 minutes, or until it is set and golden brown on top.
Let the bread pudding cool for a few minutes before serving.
You can serve the bread pudding as is or with a drizzle of icing, whipped cream, or your favorite topping.
