Cheesecake Brownie Batter Baked Oats

Ingredients

Oat Batter

  • ½ cup oat flour
  • 1 tbsp cocoa powder
  • ½ tsp baking powder
  • pinch of salt
  • cup milk
  • 2 tbsp Greek yogurt
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp mini chocolate chips

Cheesecake Filling

  • 2 tbsp cream cheese softened
  • 1 tbsp Greek yogurt
  • 1 tbsp powdered sugar
  • splash vanilla

Instructions

  • Preheat oven to 350°F.
  • In a small bowl, whisk together, oat flour, cocoa powder, baking powder, salt
  • Add:milk, Greek yogurt, maple syrup, vanilla
  • Mix until smooth.
  • Fold in chocolate chips.
  • Reserve about 2 tablespoons of batter and pour the remaining batter into an oven-safe mug or ramekin.
  • In a separate bowl, mix together: cream cheese, Greek yogurt, powdered sugar, vanilla until smooth.
  • Spoon cheesecake mixture into the center of the oat batter.
  • Top with reserved batter.
  • Sprinkle additional chocolate chips on top.
  • Bake for 18–22 minutes, until the edges are set but the center is still slightly soft.
  • Let cool for 5 minutes before digging in.
