Have you ever made cake pops? Well, these healthy Confetti Cake Pops are vegan, low in sugar, and only require a handful of ingredients.

I used to think cake pops would be the hardest thing to make, but they are super easy!

Cake pops are such fun dessert to make your own and make for a kid’s birthday, holidays, and just to eat them!

Like I said, this recipe is BEYOND EASY. You just need 3 products to get these babies going.

Miss Jones Bakes Confetti Cookie Mix: This makes this recipe SUPER easy and quick to make! Miss Jones is also one of my FAVORITE brands to bake with! They use healthy ingredients that incorporate half the amount of sugar of normal desserts

eggs: You can also try to use a flax egg or an egg substitute

Butter: You can substitute this for vegan butter if you wan to go vegan. The butter gives these cake pops. their amazing flavor

Chocolate (Optional): If you want to add a frosting or outer coat to your Confetti Cake Pops, you can melt your chocolate and dip your pops in!

How to Make Confetti Cake Pops:

To get started, prepare your cake according to the package instructions. This will vary depending on the brand that you choose. Once your cake is done allow it to cool. Then using a fork or simply your hands, start crumbling the entire cake

Next, it is time to add your frosting. I usually start with 2 tbsp. Yu can combine the cake and the frosting with a spoon, but it is easier to use my hands. I find I get a smoother texture doing so.

If needed you can totally add more frosting. When the right amount is added, the dough will easily form into balls. Not enough frosting will cause balls to crumble a bit, and too much frosting will make them too sticky.

Continue forming 1-inch balls with all of the Confetti Cake Pop batter and place them on a baking sheet lined with parchment or wax paper.  

Next, melt your chocolate or white chocolate chips. Dip each skewer into the melted chocolate before pushing them into the cake pop. This. is KEY to make sure the cake pops are secured. Refrigerate the cake pops for an hour or put them in the freezer for half an hour.

To finish it off, melt the remaining chocolate chips in a microwave safe. bowl. Roll each cake pop in the melted chocolate and allow. the excess to drip off.

Confetti Cake Pops

Ingredients

  • 1 Miss Jones Confetti Cookie Mix
  • 1 egg
  • 5 1/2 tbsp unsalted butter

Instructions

  • Cook cake mix according to instructions.
  • Once the cake is cooled, crumble it up. Then slowly add frosting until you can roll them into balls (without being too doughy). Make sure they are a tad crumbly.
  • Melt chocolate and dip the cake pop stick into the chocolate.
  • Put the chocolate end of the stick into the cake pops. This will make it easier to dip the cake pops into the white chocolate.
  • Once it hardens, dip the whole cake pop into the chocolate
  • Let the cake pops sit in the refrigerator until the chocolate hardens.
