These Gluten-Free Dairy-Free Funfetti cupcakes will store best at room temperature for up to 3 days. I would keep them in a sealed container or on a plate covered with foil. If you seal them in a container, the cupcake may get a bit softer from the frosting seeping into them.

Can you make the cupcakes nut free?

I think these funfetti cupcakes turn out the best with almond flour. It helps create the light, moist, and fluffy texture. If you NEED to try something else, oat flour may work but I have not personally tested this.

Can I make these vanilla instead of funfetti?

Yes!! Funfetti cupcakes are literally vanilla cupcakes with added sprinkles. You can easily leave out the sprinkles!

Gluten-Free Dairy-Free Funfetti Cupcakes

Ingredients

  • 1 1/4 cup non-dairy milk
  • 3/4 cup coconut sugar
  • 1/3 cup coconut oil
  • 1 tbsp vanilla extract
  • 1 3/4 cup gf all purpose flour
  • 3/4 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp soda
  • 1/4 tsp salt
  • 1/4 cup rainbow sprinkles

Instructions

  • Preheat oven to 350F
  • Line a 12 cupcake tray with liners and set aside.
  • In a medium bowl, whisk together all wet ingredients.
  • Whisk in the dry ingredients (except for the sprinkles), making sure to spoon and level the flour, don't scoop straight from the bag.
  • Whisk until smooth and fold in the sprinkles.
  • Scoop into your prepared tin, filling each about 3/4 of the way up
  • Bake for 21-25 minutes, but check with a toothpick for doneness.
  • Let them cool for 15 minutes and transfer to wire rack.
  • Then frost your cupcakes. ( I just used my favorite packaged frosting for this recipe but you can make your own)
