The Perfect High Protein Breakfast

Why skip some good ole breakfast nutrition when you can get an extra boost of protein in the morning? I fell in love with these egg breakfast biscuits as soon as I made them because they were DELISH, a great source of protein, AND you can even squeeze in some veggies in there. Did I mention they are super easy to pop into the microwave? 

I’ve been on a little egg kick lately between making deviled eggs, scrambled eggs, these egg biscuits, and quiche. No matter how you slice it, I love it all, and they are always protein-packed!

  • high protein
  • lower in calories
  • SUPER delicious

You can always add your own style to the biscuits by adding your favorite seasonings or veggies. Something you can add to these is diced tomatoes as well as another type of veggie. Broccoli happens to be my favorite but you can test out asparagus!!

What to Eat with Egg Breakfast Biscuits

If you are making egg biscuits as your main breakfast for the week, I usually eat 2-3 egg breakfast biscuits for a serving. It honestly depends on what you are used to eating for breakfast or if your day will be an active one.

If you are looking for something to serve with your egg breakfast biscuits here are a few suggestions:

  • It’s nice to serve these biscuits with fresh fruit! A little sweet and a little savory! Perfect combo
  • If you’re a huge fan of toast like me you can go ahead and toast yourself a slice and top it with what you like (butter, avocado, oil)

What other vegetables can I use in its recipe?

You can feel free to use any of your favorite vegetables that you have in the refrigerator. Just be careful with root vegetables. They typically need a longer time to cook

How do I store these breakfast biscuits?

You can store these biscuits in the refrigerator for up to 5 days. Just make sure your breakfast is cooled before sealing them into a container and placing them in the refrigerator.

Can I freeze them?

So my grandma is a HUGE advocate of freezing your food. Her freezer is overflowing with baked goods, it’s insane. She has frozen biscuits before so it CAN be done, however, I did not try with these. So experiment and let me know what happens haha.

Egg Breakfast Biscuits

Ingredients

  • 1 cup broccoli florets, chopped
  • 1/2 cup shredded cheese
  • 1/4 cup diced ham
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • pinch of salt

Instructions

  • Preheat oven to 350F and line baking sheet with parchment paper
  • Mix all ingredients together in a medium bowl then scoop and transfer to a baking sheet
  • Place into the oven for 18-20 minutes (mine were ready in 18 minutes)
