Cookie Texture is Everything

Everyone has different preferences for their cookie textures. Some like them with a crunch, some like them soft, and some like them undercooked. I wanted these to be soft and chewy and that’s exactly what I got! You can achieve this by beating your butter and sugar together for 5-7 minutes. You want them to be whipped into a fluffy texture before you move to your next step.

Can I freeze my Birthday Cake Sugar Cookies?

Yes, you can!! Once the cookies have cooled completely, freeze on a cookie tray for about 30 minutes before tossing into a zip lock bag.

Can I make this Vegan?

Yes, you can! Substitute the butter with vegan butter and use Bob Red Mill’s egg replacer for the egg!

Can I make them sugar-free?

Yes, substitute the sugar with your favorite brand! Miss Jones has keto-friendly sugar you can find here.

Chewy Birthday Cake Cookies

Ingredients

  • 3/4 cup unsalted butter
  • 1 cup smart sugar (miss jones)
  • 1 egg
  • 1 tbsp vanilla extract
  • 1 cup all purpose flour
  • 11/2 cup almond flour
  • 3/4 tps baking soda
  • 1/4 tsp salt
  • 1/3 cup sprinkles

Instructions

  • Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper.
  • In a large mixing bowl combine the butter and granulated sugar. Combine using a mixer. Beat for a few minutes.
  • Scrape down the sides of the bowl and add your egg and vanilla extract.
  • Slowly add in the flour, baking soda and salt. Mix the ingredients together on low speed just until combined. Cookie dough will be dry and incredibly fluffy. Add in sprinkles and mix just until the sprinkles are distributed throughout the dough.
  • Use a cookie dough scoop to scoop out the cookie dough and place it on the baking sheets. These ccookies will spread so make sure there is enough room in between.
  • Bake for 11 to 13 minutes, cookies should be golden brown around the edges. Mine were perfect at 12 minutes.
